Grilled Chicken with Saffron and Apricots

Ingredients

  • 1/4 cup of butter
  • 4 tbsp Olive Oil
  • 4 skinless, deboned half Chicken breasts
  • 2 garlic cloves
  • 1 onion
  • 1 small yellow pepper
  • 3/4 cup dried apricots
  • 1/2 lemon juice
  • 2 tps honey
  • Saffron
  • 1 1/2 cup chicken broth
  • Rice or Vermicelli
  • salt and pepper

Instructions

  • Heat the butter and the oil.
  • Salt and pepper the chicken breasts.
  • In the sauté pan, brown the chicken each side for about 5 – 6 minutes, until it is cooked. Set aside.
  • Chop the garlic in the Power Chef.
  • Add the onion and pepper.
  • Add them to the Sauté Pan and cook until translucent.
  • Put the apricots in the Power Chef and chop them. Add them to the sauté pan.
  • Press the lemon, using the zest n' press, into the sauté pan
  • Add the saffron, the chicken broth and the honey.
  • Leave it to simmer until the sauce thickens.
  • Cut the chicken and place it on the rice. Add the sauce.
