Place the spinach in the Power Chef® System base fitted with the blades. Cover and pull the string until finely chopped. Set aside.
In a medium bowl, whisk together the eggs and milk. With a spoon, stir in the stuffing mix, Parmesan cheese and chopped spinach. Let stand for 1-2 minutes for the stuffing mix to absorb the milk.
Form the mis into ¼ cup bites and place them on a cookie sheet lined with Silicone Baking Sheet.
Bake meatballs for 15-18 minutes or until golden brown. Serve hot.

Once cooked, the meatballs can be frozen and reheated in the oven at 350°F / 175°C for 15-20 minutes
