Ingredients

  • cups chicken stock 2
  • 2 chicken breasts cut into cubes
  • 2 cups quick-cooking rice
  • 1 tsp oregano
  • 5-6 olives chopped
  • ½ tsp Adobo with pepper seasoning
  • ¼ tsp ground annatto or praprika
  • 1 tbsp sofrito

Instructions

  • In 1¾-Qt./1.75 L Casserole, add all ingredients and stir. Stack and cook.
  • May be cooked separately, covered, on high power 10 minutes.
