- Stack Cooker
- 2 small zucchinis halved lenghtwise
- 1 can black beans drained (15oz)
- ¼ cup red onion chopped
- ½ cup whole kernel corn
- 1 tsp kosher salt
- ½ tsp garlic power
- Scoop seeds from each zucchini half and reserve them in a bowl. Add remaining ingredients to bowl and mix well to combine. Distribute mixture evenly inside zucchini and place in 1¾-Qt./1.75 Casserole. Stack and cook.
- May be cooked separately, covered, on high power 6–8 minutes.
